Sautéed Escarole with Spicy Peanuts

Ingredients

1/2 large head of escarole
1/3 cup roasted unsalted peanuts, skinless
2 garlic cloves
Olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste

Where to find ingredients

You can find escarole in the produce section of local supermarkets or greengrocers. Roasted unsalted peanuts are usually available in the snack or baking aisle. If escarole is unavailable, endive is a suitable, though slightly more bitter, substitute.

Preparation method

  1. Separate the escarole leaves and wash them thoroughly under cold running water.
  2. Dry the leaves using a salad spinner to ensure they are well-drained.
  3. Stack about 5 leaves, roll them into a cylinder, and slice into 3 cm strips.
  4. Press the garlic cloves with the side of a knife to peel them, leaving them whole to infuse the oil.
  5. Heat a large non-stick skillet over medium heat.
  6. Add a drizzle of olive oil, the peanuts, cayenne pepper, and a pinch of salt.
  7. Sauté the peanuts for about 3 minutes until lightly golden.
  8. Remove the peanuts from the pan and set aside in a small bowl.
  9. In the same skillet, still over medium heat, add 1 1/2 teaspoons of olive oil and one garlic clove.
  10. Sauté the garlic for 1 minute just to perfume the oil.
  11. Add half of the escarole, season with a pinch of salt, and sauté for 2 minutes.
  12. Stir occasionally until the leaves are slightly wilted yet hold their texture, avoiding excess liquid.
  13. Remove the first batch of escarole and repeat the process with the remaining leaves.
  14. Transfer the sautéed escarole to a serving dish and top with the spicy peanuts before serving.

Observations

This side dish adds a delightful crunch and a subtle kick of spice that elevates the greens. It is an excellent choice for a nutritious and quick vegetable side, perfect for diversifying your everyday meals.
