2 tablespoons lard
1 onion, chopped
2 cloves garlic, minced
2 cups rice
5 cups boiling water
Fresh green herbs (parsley/chives), to taste

Where to find ingredients

Preparation

  1. Soak the jerked beef in water in advance
  2. Change the water several times to remove excess salt
  3. Heat the lard in a large pot
  4. Sauté the onion and garlic until golden
  5. Add the diced jerked beef and fry well
  6. Stir in the rice and sauté along with the meat
  7. Pour in the boiling water
  8. Reduce heat and cook until the rice is tender
  9. Finish by sprinkling with chopped green herbs just before serving

Notes

This dish is a legacy from the expeditions of ancient wagon drivers, who needed a nutritious meal that was easy to transport. The secret lies in sautéing the jerked beef, which gives the recipe all its personality.
