Parmigiana-Style Baked Rice

Ingredients

2 cups rice
4 cups water
2 chicken bouillon cubes
3 skinless tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated cheese
100 g chopped ham
100 g chopped mozzarella

Preparation

  1. Dissolve one of the chicken bouillon cubes in a small amount of hot water
  2. Blend the skinless tomatoes, tomato paste, and the dissolved bouillon cube with a little extra water in a blender to create a sauce
  3. Cook the rice in a pot with the remaining chicken bouillon cube and 4 cups of water for 15 minutes
  4. Beat the eggs in a bowl and mix with the grated cheese, chopped ham, and chopped mozzarella
  5. Incorporate this egg and cheese mixture into the cooked rice
  6. Spread a portion of the tomato sauce on the bottom of a baking dish
  7. Distribute the rice mixture over the sauce
  8. Cover the rice with the remaining tomato sauce
  9. Place in a preheated oven at 180°C for 10 to 15 minutes to finish
