Where to find ingredients
Chicken breast, potatoes, onions, tomatoes, and bell peppers can be found at any local supermarket or fresh produce market (musika). For the green olives, look in the pantry staples or canned goods aisle at major retailers. Onion soup mix is commonly found in the soup or spice aisle. Fresh coriander is available in the fresh herbs section. Mozzarella cheese is standard in the dairy section; if you cannot find it, a mild cheddar or a pizza-blend cheese are good alternatives. For specialized Brazilian items, you may check stores that stock imported Latin American pantry products, though most of these ingredients are widely available in Zimbabwean grocery stores.
Preparation method
- Boil the potatoes until soft, mash them thoroughly with the butter, and set aside
- Heat the oil in a large pan and sauté the chopped onion until softened
- Add the chicken cubes to the pan and cook until browned on all sides
- Stir in the diced tomatoes, green bell pepper, chopped olives, and coriander, cooking for a few minutes to combine flavours
- In a separate jug, whisk the onion soup mix into the milk until smooth
- Pour the milk and onion mixture over the sautéed chicken
- Simmer while stirring constantly until the sauce thickens to a creamy consistency
- Grease a baking dish with a little butter to prepare for assembly
- Spread the creamy chicken mixture as the base layer in the baking dish
- Evenly cover the chicken layer with the cooked rice
- Spread the mashed potatoes carefully over the top of the rice
- Finish by topping with a generous layer of grated mozzarella cheese
- Bake in a preheated oven at 180°C for approximately 20 minutes, or until the cheese is bubbling and golden
