1 garlic clove
2 tablespoons of olive oil

200 g of green beans (about 20 units)
1/2 onion
1 garlic clove
2 tablespoons of olive oil
1 tablespoon of wheat flour
1 teaspoon of sweet paprika
1/2 teaspoon of cumin
1 cup of water
salt and freshly ground black pepper to taste
Where to find ingredients
Fresh produce and meats are available at local community markets and supermarkets. Green beans can be substituted with runner beans if necessary, and lean ground beef is the ideal cut.
Preparation method
- Remove the meat from the refrigerator shortly before starting so it reaches room temperature
- Bring the water to a simmer over low heat
- Wash the green beans thoroughly
- Remove the tips and cut them into 1.5 cm pieces, using a diagonal cut
- Dice the onion into 1 cm cubes
- Peel and finely mince the garlic
- Heat a large pot or skillet over medium heat
- Add 1 tablespoon of olive oil and spread the meat in small portions across the pan
- Let the meat brown without stirring for 1 minute
- Season with salt, pepper, and sprinkle the wheat flour over the meat
- Cook for 5 minutes, stirring occasionally so the pieces break apart and brown evenly
- Transfer the browned meat to a bowl and set aside
- Keep the pan over the heat and add the remaining olive oil and the onion
- Add a pinch of salt and sauté the onion for 2 minutes until soft
- Add the green beans to the pan
- Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping them crisp
- Add the garlic, paprika, and cumin
- Sauté for 1 more minute until the spices become aromatic
- Pour in the hot water gradually while scraping the bottom of the pan with a spatula
- Return the ground meat to the pan
- Cook for 2 more minutes until the sauce has thickened
- Serve immediately
Observations
This dish is an excellent choice for daily meals, perfectly balancing the protein of the beef with the crunch and freshness of green beans. Follow the instructions to ensure the meat browns properly before incorporating the vegetables.
