Where to find ingredients
Find the ingredients at local supermarkets, fresh produce markets, and the meat counter. Bulgur for kibbeh may be stocked with grains or international foods; if unavailable, a Middle Eastern grocer is the best substitute source.
Preparation method
- Place the kibbeh wheat in a bowl
- Cover with water and let it hydrate for 3 hours
- Drain off all excess liquid
- Squeeze the wheat between your hands to remove any remaining moisture
- Add the meat, onions, tomato, mint, salt and pepper
- Mix all the ingredients until you have a well combined mixture
- If you prefer a finer, more even texture, run the mixture through a food processor or grinder
- Spread the mixture evenly in a greased baking dish
- Drizzle the surface of the kibbeh with the olive oil
- Bake in the oven until cooked through
Observations
This practical recipe gives you a moist, flavourful kibbeh. The key is to hydrate the wheat properly and use fresh herbs, which lend the dish a distinctive aroma.
