Neapolitan Rice with Cheese and Tomato (Arroz napolitano)

Ingredients

2 cups of rice, preferably long-grain
150g of sliced mozzarella cheese, which can be replaced by Edam or local semi-hard cheese
2 beef bouillon cubes, which can be found in supermarkets in the seasoning or broth aisle
2 tablespoons of margarine or butter
4 ripe tomatoes, thinly sliced
1 teaspoon of dried oregano

Where to find ingredients

All ingredients can be found in general supermarkets or fresh produce markets. As a substitute for mozzarella, you can use any good melting cheese available in local dairy aisles.

Preparation method

  1. Dissolve the beef bouillon cubes in four cups of boiling water, stirring until completely dissolved
  2. Add the rice to the broth water and cook over low heat until tender, approximately twenty minutes
  3. Once cooked, add the margarine and mix gently with a fork to fluff the grains
  4. Transfer the rice to a medium baking dish and spread the tomato slices on top
  5. Sprinkle the oregano over the tomatoes and cover everything with the slices of mozzarella cheese
  6. Bake in a preheated oven at 200°C for about ten minutes or until the cheese is melted and lightly browned
  7. Serve hot, accompanied by a salad or as a main dish
