Ingredients
100g sugar
2 tbsp chopped cashews
2 medium papayas, fresh flesh scooped out
250ml heavy whipping cream
2 tbsp chopped cashews
2 medium papayas, fresh flesh scooped out
250ml heavy whipping cream
Where to find ingredients
You can find fresh papayas at most local grocery stores or produce markets in Samoa; look for the ones that feel slightly soft to the touch. Heavy whipping cream is widely available in the dairy section of standard supermarkets. Cashews can be found in the snack aisle or in the baking section; if you can't find them, raw peanuts provide a similar satisfying crunch. For the best result, use fresh, ripe papaya rather than frozen fruit.
Preparation method
- Slice the papayas in half and scoop out all the seeds
- Take the flesh of one papaya and process it until you have a smooth puree
- Dice the flesh of the second papaya into small, bite-sized pieces and set them aside
- Whisk the heavy whipping cream with the sugar using an electric mixer until you have stiff peaks
- Gently fold the papaya puree into the whipped cream, being careful to keep the mixture light and airy
- Fold in the diced papaya pieces carefully to combine
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmold, briefly run the bottom of the container under warm water
- Cut the sorvete into cubes, serve in bowls, and finish with a sprinkle of chopped cashews on top
- If you like, squeeze a few drops of lime over the bowls for a little zesty kick
Observations
This papaya sorvete is a Brazilian-inspired dessert that blends the sweet, tropical notes of fresh papaya with a velvety, refreshing texture. It’s ideal for hot weather, simple to assemble, and offers a natural, clean flavor. The combination of pureed papaya, fresh cream, and cashews creates an irresistible treat that works just as well for a casual snack at home as it does for a gathering.
