200 g okra (approx. 20 pods)
1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can diced peeled tomatoes (with liquid)
2/3 cup water
1 tbsp olive oil
1/2 tsp cumin seeds
Sea salt and freshly ground black pepper to taste

Preparation method

  5. Halve the bell pepper, remove the seeds, and dice half of it into 1 cm cubes.
  6. Lightly crush the cumin seeds in a mortar and pestle to release their aroma.
  7. Heat a medium saucepan over medium heat with the olive oil.
  8. Add the onion and bell pepper to the pan.
  9. Season with a pinch of salt and sauté for 3 minutes until the vegetables soften.
  10. Stir in the minced garlic and the crushed cumin seeds.
  11. Sauté for 1 minute until fragrant.
  12. Pour in the water and stir well to deglaze the bottom of the pan.
  13. Incorporate the canned tomatoes and their juices.
  14. Season with 1 teaspoon of salt and black pepper to taste.
  15. Bring the mixture to a gentle boil over medium heat.
  16. Lower the heat and simmer for 5 minutes, stirring occasionally until the sauce thickens.
  17. Add the sliced okra to the saucepan.
  18. Cook for another 6 minutes, stirring from time to time, until the okra is tender.
  19. Take care not to overcook the okra to ensure it retains its characteristic texture.
  20. Serve warm immediately.
