450 g peeled, cooked potatoes

Where to find ingredients
Look for the ingredients in the fresh produce section, dairy aisle, and bakery supplies aisle of a supermarket or wet market. If needed, a good-quality butter substitute can be used, but butter is ideal.
Preparation method
- Peel the potatoes and place them in a pot with water
- Bring to a high heat until it starts to boil
- Add salt and cook for about 20 minutes or until soft
- Drain all the water and pass the potatoes through a potato ricer
- Mix the butter and egg yolks well into the mashed potatoes
- Season with salt, black pepper and nutmeg, stirring to combine the flavours
- Transfer the dough to a piping bag fitted with a large nozzle
- Preheat the oven to 180°C
- Grease a baking tray with butter and dust with plain flour
- Shape potato rosettes on the tray by pressing the piping bag
- Start in the centre and move in a spiral to form the rosette
- Leave space between each portion on the tray
- Bake in the preheated oven for about 30 minutes or until the surface is lightly golden
- Remove from the oven and serve immediately
Observations
These little potato bakes have a soft texture and a delicate shape, making them ideal as part of a main meal or served as a snack. Using a piping bag helps create an elegant, even finish.
