Where to find ingredients
Find black beans and specialized cuts like carne-seca, paio, and calabresa at local butcher shops or specialty Latin food grocers in Singapore. Fresh produce and standard meat cuts are available at major supermarket chains like NTUC FairPrice, Cold Storage, or local wet markets.
Preparation method
- Sort the beans, rinse well under cold running water, and soak until the following day
- Thoroughly rinse the salted meats to remove excess salt and soak for 24 hours, changing the water several times
- On the day of cooking, boil the salted meats in water to remove remaining salt
- In a large pot, lightly sear the fresh and salted meats in a little olive oil
- Place the beans, carne-seca, and tougher meat cuts into a pressure cooker with water
- Cook over medium heat until they begin to soften
- Cook the tender meat cuts separately to ensure they do not break apart
- Sauté the minced garlic in a separate frying pan with a little oil or olive oil
- Transfer the beans and all meats into a large, spacious pot
- Carefully check the seasoning, keeping in mind that the salted meats will already season the dish
- Fry the bacon, calabresa, and onion, then add them to the main stew along with the sautéed garlic
- Let the feijoada simmer over low heat for 15 to 20 minutes to thicken the broth
- Add oranges cut into quarters into the pot if desired, to aid in flavor and balance the salt
Observations
Feijoada stands as the most iconic dish in Brazilian cuisine. This version incorporates a variety of pork and beef cuts, resulting in a thick, flavorful stew. Success relies on the patient preparation of the meats and a well-balanced seasoning. It should always be served alongside white rice, sautéed kale, and orange slices to balance the palate.
