3/4 cup green olives, chopped

1 packet onion soup mix
800 ml milk
3 cups cooked rice
Grated mozzarella cheese, to taste
1 kg potatoes
1 tbsp butter
2 tbsp olive oil
1 onion, chopped
6 tomatoes, chopped
1/2 capsicum, chopped
3/4 cup green olives, chopped
2 tbsp coriander, chopped
1 packet onion soup mix

Where to find ingredients
Look for the chicken, potatoes, milk, butter, cheese and vegetables at your local supermarket; the onion soup mix is usually in the soup or seasoning aisle, and the olives and coriander are in the fresh produce section. If needed, a mild onion soup mix can be used as a substitute for the cebola cream mix, but keep the original ingredient as the ideal choice.
Preparation method
- Prepare the mashed potatoes by boiling the potatoes until tender, mash them with the butter and set aside
- In a pan, heat the olive oil and sauté the chopped onion
- Add the chicken cubes and brown
- Add the chopped tomatoes, chopped capsicum, chopped green olives and chopped coriander. Cook for a few minutes
- In a separate bowl, mix the onion soup mix with the milk
- Pour the onion soup and milk mixture over the sautéed chicken
- Cook, stirring constantly, until the sauce thickens
- In a butter-greased baking dish, assemble the escondidinho
- Make a layer with the chicken cream
- Cover with a layer of cooked rice
- Add a layer of mashed potatoes
- Finish with a generous layer of grated mozzarella cheese
- Bake in a preheated oven at 180°C for about 20 minutes, or until the cheese melts and turns golden
