Ingredients
1 kg boneless, skinless chicken thighs
3 cloves garlic, crushed
1/4 cup vinegar
3 bay leaves
Salt to taste
1 tablespoon vegetable oil
2 medium onions, sliced into rings
2 ripe tomatoes, sliced into rings
1 tablespoon oregano
1/2 tablespoon dried chilli flakes (optional)
1/2 litre chicken stock
1/2 cup chopped parsley and spring onion
3 cloves garlic, crushed
1/4 cup vinegar
3 bay leaves
Salt to taste
1 tablespoon vegetable oil
2 medium onions, sliced into rings
2 ripe tomatoes, sliced into rings
1 tablespoon oregano
1/2 tablespoon dried chilli flakes (optional)
1/2 litre chicken stock
1/2 cup chopped parsley and spring onion
Where to find ingredients
Look for the chicken thighs, herbs, vegetables and stock at any supermarket in the chilled poultry section, produce aisle and stock cubes or fresh stock section. If needed, substitute fresh parsley and spring onion for cheiro-verde, but keep the flavour balance the same.
Preparation method
- In a bowl, season the chicken thighs with the crushed garlic, vinegar, bay leaves and salt. Leave to marinate for at least 1 hour
- Heat the oil in a large saucepan over medium-high heat
- Brown the marinated chicken thighs on all sides
- Add the onion and tomato rings to the pan, gently mixing with the chicken
- Sprinkle the oregano and dried chilli flakes (if using) over the ingredients in the pan
- Pour the chicken stock into the pan
- Cover the pan and cook over low heat for about 10 minutes after it comes to the boil, until the chicken is tender and the sauce has thickened
- Finish with the chopped parsley and spring onion and serve hot
