Where to find ingredients
Find these ingredients at local butchers and international grocery stores. The cured meats like carne-seca, paio, and linguiça calabresa are essential for the authentic taste; if unavailable, use high-quality dried beef, chorizo, or similar smoked sausages as substitutes.
Preparation method
- Sort through the beans, rinse them thoroughly under running water, and soak them until the following day
- Soak the salted meats in water for 24 hours to remove excess salt, changing the water several times
- On the day of cooking, boil the salted meats in water to remove any remaining salt
- In a large pot, lightly sear the fresh and salted meats in a little olive oil
- Place the beans, carne-seca, and tougher cuts of meat in a pressure cooker with water
- Cook over medium heat until the ingredients start to become tender
- Cook the more tender cuts of meat separately so they do not fall apart
- In a separate skillet, sauté the minced garlic in a little oil or olive oil
- Transfer the beans and all the meats to a large, spacious heavy-bottomed pot
- Taste for salt carefully, remembering that the cured meats already season the stew
- Fry the bacon, calabresa, and onion, then add them to the main stew along with the sautéed garlic
- Simmer the feijoada over low heat for 15 to 20 minutes to allow the broth to thicken
- Add orange slices cut into quarters into the pot if desired, to help with flavor and salt balance
Observations
Feijoada is widely considered the most emblematic dish in Brazilian cuisine. This version incorporates a variety of pork cuts and beef, resulting in a rich, flavorful, and thick stew. The secret lies in the patient preparation of the meats and a well-balanced seasoning. It is traditionally served with white rice, sautéed collard greens, and orange slices to help cleanse the palate.
