Ground Beef with Green Beans (Carne moída com vagem)

Ingredients

400 g ground lean beef (patinho)
200 g green beans (approx. 20 pods)
1/2 onion
1 garlic clove
2 tbsp olive oil
1 tbsp wheat flour
1 tsp sweet paprika
1/2 tsp cumin
1 cup water
Salt and freshly ground black pepper to taste

Where to find ingredients

You can find lean ground beef, fresh green beans, and standard pantry staples like wheat flour, onion, garlic, and spices at any local supermarket or neighborhood grocery store. As a substitute for patinho (lean round beef), any lean ground beef blend is perfectly suitable.

Preparation method

  1. Remove the beef from the refrigerator shortly before starting so it reaches room temperature.
  2. Place the water to boil over low heat.
  3. Wash the green beans thoroughly.
  4. Remove the ends and cut them into 1.5 cm pieces, using a diagonal cut.
  5. Dice the onion into 1 cm cubes.
  6. Peel and finely mince the garlic.
  7. Heat a large pot or skillet over medium heat.
  8. Add 1 tablespoon of olive oil and spread the meat in small portions across the pan.
  9. Let the meat brown without stirring for 1 minute.
  10. Season with salt, pepper, and sprinkle the wheat flour over the meat.
  11. Cook for 5 minutes, stirring occasionally so the pieces break apart and brown evenly.
  12. Transfer the browned meat to a bowl and set aside.
  13. Keep the pan over the heat and add the remaining olive oil and the onion.
  14. Add a pinch of salt and sauté the onion for 2 minutes until soft.
  15. Add the green beans to the pan.
  16. Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping them crisp.
  17. Add the garlic, paprika, and cumin.
  18. Sauté for another 1 minute until the spices release their aroma.
  19. Pour the hot water in gradually while scraping the bottom of the pan with a spatula.
  20. Return the ground beef to the pan.
  21. Cook for another 2 minutes until the sauce has thickened.
  22. Serve immediately.

Observations

This dish is an excellent choice for daily meals, perfectly balancing the protein of the beef with the crisp freshness of green beans. Follow the steps carefully to ensure the beef browns thoroughly before adding the vegetables, which provides depth to the final sauce.
