Ingredients

1 kg sweet potato
100 g butter
3 eggs
100 g dried shredded coconut
3 tablespoons sugar
1 can sweetened condensed milk
1 tablespoon baking powder
Butter for greasing
Powdered sugar for dusting

Preparation

  1. Cook the sweet potatoes in a pressure cooker with 500 ml of water for approximately 20 minutes
  2. Peel the potatoes while still hot and process them through a potato ricer or masher
  3. Add the butter to the mashed potatoes and mix well
  4. Add the eggs and incorporate gently
  5. Mix in the shredded coconut and sugar, stirring well
  6. Add the sweetened condensed milk and continue stirring until you obtain a homogeneous batter
  7. Finish by folding in the baking powder
  8. Transfer the batter into a greased medium rectangular baking pan
  9. Bake in a preheated oven at 180°C for about 45 minutes
  10. Allow the cake to cool completely
  11. Dust with powdered sugar before cutting into squares to serve
