Look for tomatoes, basil, salt, olive oil, and black pepper at local grocery stores, fresh produce markets, and the produce or spice aisle. If needed, coarse salt can be replaced with ordinary salt for draining, but coarse salt is ideal.
Preparation method
- Wash and dry the tomatoes well.
- Remove the top from each tomato.
- Place each tomato cut-side down on the board.
- Make a cross cut and then an X cut to get 8 even wedges.
- Put the tomato pieces in a sieve or colander set over a bowl.
- Scatter the coarse salt over them and toss well so everything is coated.
- Cover the container with plastic wrap or a plate.
- Refrigerate for 24 hours so the tomato can drain and keep its texture.
- If you need to serve it sooner, let it drain for at least 30 minutes.
- Remove from the refrigerator just before serving.
- Discard any liquid collected in the bowl.
- Gently shake the wedges to remove excess coarse salt.
- Arrange the tomatoes on a plate.
- Finish with olive oil and black pepper.
- Add the basil leaves to taste and serve.
