You can find fresh produce like 'abóbora de pescoço' at local markets or grocery stores, usually in the fresh vegetable section. If unavailable, butternut squash is the closest substitute.
Preparation method
- Peel the pumpkin and cut the flesh into cubes of about 2 cm
- Finely mince the garlic cloves
- Place a large saucepan or skillet over medium heat with the olive oil
- Add the garlic and sauté for 1 minute just to scent the oil, being careful not to let it burn
- Add the pumpkin cubes and salt to the pan
- Stir the ingredients occasionally for 10 minutes, until the pumpkin starts to soften
- Place the lid on the pan and reduce the heat to the lowest setting
- Let it cook for 5 minutes so that the pumpkin finishes softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred texture
- Turn off the heat and serve immediately
