Juice of 1/2 lemon
1/2 tsp coriander seeds
Olive oil, to taste
Salt, to taste
Juice of 1/2 lemon
1/2 tsp coriander seeds
Olive oil, to taste
Salt, to taste
Where to find ingredients
Look for courgettes in the produce section, and pick up dried coriander seeds, salt, lemons, and olive oil in the spices and condiments aisles at your local market or supermarket. If needed, lemon juice can be used as a substitute for fresh lemon juice.
Preparation method
- Wash the courgette thoroughly under running water using a vegetable brush
- Dry it with a clean dish towel
- Trim off and discard the ends
- Cut the courgette crosswise to separate the thicker section from the thinner end
- Slice the thick section lengthwise in half, then cut each half into three strips to form batons
- Cut the thinner section in half crosswise so all the pieces are similar in size
- Cut each of those pieces into four parts
- Heat a nonstick skillet over medium heat
- Add a drizzle of olive oil and place the courgette pieces cut side down
- Grill for about 2 minutes until golden
- Lightly crush the coriander seeds in a mortar to release their aroma
- Turn the batons with tongs to brown the other side
- Add the coriander seeds, season with salt, and add a little more olive oil
- Sauté for another 1 minute until the courgette is tender and seasoned
- Finish by turning off the heat and stirring in the lemon juice
- Serve immediately
Observations
