1/2 onion, finely chopped
1 bay leaf
1 cup white rice
1/2 teaspoon salt

Where to find ingredients
You can find these ingredients at local grocery stores or open-air markets. Vegetable oil can be used as a substitute for olive oil if preferred.
Preparation method
- Finely dice the onion
- Bring the water to a boil
- Heat a medium pot over low heat
- Add the olive oil and onion to the pot
- Add a pinch of salt
- Sauté the onion for 2 minutes until softened
- Add the bay leaf to the sautéed mixture
- Add the rice and stir for 1 minute so the grains are coated in the oil
- Pour the boiling water over the rice
- Season with the remaining salt and stir gently
- Increase the heat to medium
- Do not stir the rice from this point on
- Wait until the water level reaches the top of the grains
- Lower the heat and partially cover the pot
- Cook until all the water has been absorbed
- Check for doneness by inserting a fork to move the grains at the bottom of the pot
- Keep on the heat for a few more moments if any moisture remains
- Turn off the heat and keep the pot covered for 5 minutes to allow the steam to finish the cooking process
- Fluff the grains gently with a fork before serving
