Roasted Cassava (Mandioca assada)

Ingredients

1.5 kg cassava (or 1.2 kg if already peeled)
3 tablespoons extra virgin olive oil
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

Cassava can be found at local fresh produce markets or specialty grocery stores. If fresh cassava is unavailable, frozen cassava (often found in the frozen food aisle of international grocery stores) is a common substitute, though you may skip the pressure-cooking step if it is already pre-boiled.

Preparation method

  1. Preheat the oven to 220 ºC
  2. Peel the cassava
  3. Cut into large pieces approximately 8 cm long
  4. Rinse the pieces well under running water
  5. Place the cassava in a pressure cooker
  6. Cover with water, not exceeding two-thirds of the pot's capacity
  7. Close the lid and place over high heat
  8. Once the pressure cooker begins to whistle
  9. Reduce the heat and cook for 5 minutes
  10. The ideal consistency is tender but firm enough to be cut
  11. Turn off the heat
  12. Wait for the pressure to release completely before opening
  13. Drain the water well in a colander
  14. Let it cool slightly before handling
  15. Grease a large baking sheet with half of the olive oil
  16. Slice the cassava pieces in half lengthwise
  17. Divide each half into sticks about 2 cm thick
  18. Arrange the sticks on the baking sheet without overlapping
  19. Drizzle with the remaining olive oil
  20. Season with salt and pepper to taste
  21. Bake for approximately 40 minutes
  22. Turn the sticks halfway through the baking time so they brown evenly
  23. Remove from the oven and serve immediately

Observations

This recipe uses a pressure cooker for the initial step, ensuring the cassava is perfectly tender before it is finished in the oven. This technique creates a beautiful golden crust while maintaining a soft, delicate texture inside, delivering an authentic and flavorful result.
