75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste
2 cups flaked yellow cornmeal
75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
You can find plantains in the produce section of local markets or neighborhood grocery stores. Flaked yellow cornmeal is typically found in the baking or grains aisle. If you prefer a different texture, fine cassava flour can be used as a traditional alternative.
Preparation method
- Trim the ends off the plantains and peel them
- Slice each plantain in half lengthwise
- Cut each half lengthwise once more
- If the strips feel too thick, cut them into three segments
- Dice each piece of plantain into approximately 1 cm cubes
- Heat a large non-stick skillet over medium heat
- Add the oil to the skillet
- Add the diced plantains to the pan and season with a pinch of salt
- Sauté the plantains for about 6 minutes, stirring occasionally, until lightly caramelized. Cooking time may vary depending on the ripeness of the plantains; riper ones will brown faster
- Turn the heat down to low
- Add the butter cubes to the pan and stir until completely melted
- Season with 1 teaspoon of salt and black pepper to taste
- Add the cornmeal gradually, stirring continuously with a spatula to ensure it is well combined
- Cook for another 4 minutes, stirring constantly, until the farofa becomes crispy and golden brown
- Remove from heat and serve the farofa immediately
Observations
Farofa de banana-da-terra is a traditional Brazilian staple, cherished for its unique harmony of textures and flavors. The natural sweetness of caramelized plantains offers a wonderful contrast to the satisfying crunch of the cassava or corn flour base, making it a versatile and flavorful choice to round out any meal. This recipe is straightforward and fast to whip up, perfect for those seeking a special touch for everyday cooking.
