Where to find ingredients
Prawns can be found at local fishmongers or specialty seafood counters. Cassava (often labeled as yuca) is available in vegetable markets. Coconut milk, dendê oil (palm oil), and fresh herbs are standard in most large supermarkets or local grocery shops. As a substitute for dendê oil, red palm oil is the closest alternative to maintain the authentic flavor profile.
Preparation method
- Clean the prawns thoroughly.
- Season the prawns with salt, garlic, pepper, and lemon juice.
- Let the prawns marinate for a few minutes.
- Boil the cassava in a pot with water, the bay leaf, and the sliced onion.
- Once the cassava is very tender, add one bottle of coconut milk to the pot.
- Let the mixture cool slightly, then blend everything in a blender until smooth.
- Heat the olive oil in a large pan and sauté the grated onions until golden.
- Add the marinated prawns and sauté until they change color.
- Stir in the tomato sauce, the chopped parsley/scallions, and the green bell peppers.
- Cook for a few minutes.
- Incorporate the blended cassava cream, the second bottle of coconut milk, and the dendê oil.
- Bring to a gentle boil and turn off the heat once everything is well-heated through.
Observations
This dish perfectly balances the succulent texture of prawns with the earthy creaminess of puréed cassava, creating a hearty and comforting meal that is packed with vibrant personality.
