Garlic, lemons, and pantry staples like sea salt and beef stock are available in any standard Irish supermarket like Dunnes, Tesco, or SuperValu. Preparation method
- Rub the racks of ribs thoroughly with the crushed garlic, lemon juice, and a generous pinch of sea salt
- Place the seasoned meat into a roasting tray
- Cover the tray tightly with tin foil to trap the heat
- Pop it into a preheated oven at 180°C and let it roast slowly for 3 hours
- Remove the tin foil cover
