Sautéed Escarole with Spicy Peanuts

Ingredients

1/2 large bunch of escarole
1/3 cup toasted skinless unsalted peanuts
2 garlic cloves
Olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste

Where to find ingredients

You can find fresh escarole, garlic, and peanuts at local community markets or grocery produce aisles. Use high-quality extra virgin olive oil available at standard pantry sections.

Preparation method

  1. Separate the escarole leaves and wash them thoroughly under running water.
  2. Dry the leaves using a salad spinner to ensure they are completely moisture-free.
  3. Stack about 5 leaves, roll them into a cylinder, and slice into 3 cm strips.
  4. Crush the garlic cloves with the flat side of a knife to peel them, keeping them whole to infuse the oil.
  5. Heat a large non-stick frying pan over medium heat.
  6. Add a drizzle of olive oil, the peanuts, the cayenne pepper, and a pinch of salt.
  7. Sauté the peanuts for about 3 minutes until they are lightly golden.
  8. Remove the peanuts from the pan and set aside in a bowl.
  9. In the same pan, still over medium heat, add 1 1/2 teaspoons of olive oil and one garlic clove.
  10. Sauté the garlic for 1 minute just until the oil is fragrant.
  11. Add half of the escarole, season with a pinch of salt, and sauté for 2 minutes.
  12. Stir occasionally until the leaves are slightly wilted but still retain their texture, taking care not to release excess water.
  13. Remove the first batch of escarole and repeat the process with the remaining leaves.
  14. Transfer the sautéed escarole to a serving dish and finish by sprinkling the spicy peanuts on top before serving.

Observations

This side dish provides a delightful crunch along with a subtle kick of spice that perfectly complements the greens. It is a fantastic way to add variety to your daily vegetable routine.
