Grilled Zucchini with Lemon (Abobrinha grelhada com limão)

Ingredients

1 zucchini
Juice of 1/2 lime
1/2 teaspoon coriander seeds
Olive oil to taste
Salt to taste

Where to find ingredients

Zucchini (often sold as courgette) is widely available in local supermarkets and municipal markets. Look for firm, bright green skins. Lime is a staple in local cooking and easily found in any market or grocery store. Coriander seeds can be purchased at spice stalls in local markets or in the seasoning aisle of most supermarkets. Ensure you look for dried, whole seeds to crush yourself for the best aroma. Salt and olive oil are basic pantry staples available everywhere.

Preparation method

  1. Scrub the zucchini skin well under running water using a vegetable brush
  2. Pat it dry with a clean kitchen towel
  3. Trim off and discard both ends
  4. Cut the zucchini crosswise to separate the thicker part from the thinner tip
  5. Slice the thick section in half lengthwise, then cut each half into three long strips to create sticks
  6. Divide the thin section in half crosswise so all pieces are roughly the same size
  7. Cut each of these small sections into four pieces
  8. Heat a non-stick frying pan over medium heat
  9. Add a drizzle of olive oil and lay the zucchini pieces flat, cut-side down
  10. Grill for about 2 minutes until nicely browned
  11. Lightly crush the coriander seeds in a mortar and pestle to release their fragrance
  12. Flip the sticks with kitchen tongs to brown the other side
  13. Add the crushed coriander seeds, season with salt, and drizzle with a little more olive oil
  14. Sauté for another 1 minute until the zucchini is tender and well-seasoned
  15. Finish by turning off the heat and stirring in the fresh lime juice
  16. Serve immediately

Observations

This dish highlights the natural taste of fresh zucchini with a zesty, aromatic citrus kick. It is a light, wholesome choice for a quick weeknight veggie side.
