Ingredients
1 cup white rice
2 cups water
1 tablespoon vegetable oil
1/2 onion
1 bay leaf
1/2 teaspoon salt
zest of 1 Persian lime
2 cups water
1 tablespoon vegetable oil
1/2 onion
1 bay leaf
1/2 teaspoon salt
zest of 1 Persian lime
Where to find ingredients
You can find white rice and onions at any local market or grocery store across Guyana. For the Persian lime, look for them at local fresh produce stalls or municipal markets; they are standard for cooking here. Salt, oil, and bay leaves are pantry staples available in any neighborhood shop or supermarket aisle.
Preparation method
- Peel the onion and finely dice it
- Put the water in a kettle and bring to a boil over low heat
- Warm up a medium saucepan over low heat
- Add the oil and the diced onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is soft
- Add the bay leaf and the rice to the pot
- Stir for about 1 minute so the grains are well coated in oil, which helps them cook up fluffy
- Measure 2 cups of the boiling water and pour it over the rice
- Season with the remaining salt and stir once
- Turn the heat up to medium
- Avoid stirring the rice from this point on
- Wait for the water to evaporate until it reaches the level of the rice grains
- Lower the heat and cover the pot partially with the lid
- Cook until all the water is absorbed
- Check the bottom of the pot with a fork to ensure all the water has evaporated
- Turn off the heat
- Add the lime zest
- Cover the pot completely
- Let the rice steam and rest for 5 minutes
- Use a fork to fluff the grains and incorporate the zest
- Transfer to a serving bowl and serve immediately
