Homemade potato gnocchi (Nhoque de batata)

Ingredients

6 medium potatoes
1 cup all-purpose flour
Salt to taste
500g ground beef
1/2 onion, finely chopped
1 tablespoon olive oil
2 beef bouillon cubes
1 can tomato sauce
Grated cheese to taste

Where to find ingredients

You can find all ingredients at local markets or neighborhood grocery stores. Opt for floury potatoes for the best texture. If you prefer a lighter sauce, you may substitute the beef bouillon cubes with fresh herbs and a pinch of salt to taste.

Preparation method

  1. Boil the potatoes in water until they are tender.
  2. Peel the potatoes and pass them through a potato ricer while still hot.
  3. Gradually add the flour and salt, kneading until you obtain a smooth, uniform dough.
  4. Place the dough on a floured surface and shape it into long, thin ropes.
  5. Cut each rope into pieces approximately 2 cm long.
  6. In a large pot, bring plenty of salted water to a boil.
  7. Once boiling, add the gnocchi in batches and wait for them to rise to the surface.
  8. Prepare a bowl with cold water and a colander. Remove the cooked gnocchi with a slotted spoon and place them in the colander for a thermal shock.
  9. Repeat the process until all the dough is cooked.
  10. Drain the gnocchi well and set them aside in a baking dish.
  11. Finely dice the onion and sauté it in a pan with olive oil.
  12. Add the ground beef and the beef bouillon cubes to the sautéed onion.
  13. Stir well, and once the meat is cooked, add the tomato sauce.
  14. Let the sauce simmer for an additional 4 minutes.
  15. Pour the meat sauce over the reserved gnocchi.
  16. Sprinkle with grated cheese.
  17. Place in the oven to gratiné until golden.
  18. Serve hot.
