Ingredients
6 ears of fresh sweet corn
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese
Where to find ingredients
You can find fresh corn, milk, and eggs at local markets (lumos) or neighborhood grocery shops. Parmesan cheese is available in the dairy aisle of larger supermarkets. Use all-purpose flour found in the baking staples section.
Preparation method
- Wash the corn ears thoroughly and remove all the silk.
- Cut the kernels off the cobs using a sharp knife and set aside in a bowl.
- Place the corn kernels and milk into a blender.
- Blend the mixture well until smooth.
- Add the all-purpose flour to the blender.
- Blend again to fully incorporate the flour.
- Pass the mixture through a fine-mesh sieve to remove the fiber and skins.
- Transfer the liquid to a saucepan and place over low heat.
- Stir constantly until it thickens, ensuring no lumps form in the dough.
- Transfer the cream to a baking dish and let it cool completely.
- Mix the egg yolk into the cooled dough.
- Knead the dough with hands lightly dusted with flour.
- Shape the dough into long cylinders on a surface sprinkled with flour.
- Cut the cylinders into small pieces, the traditional size of gnocchi.
- Cook the pieces in boiling water until they rise to the surface.
- Remove the gnocchi from the water and place them in a serving dish.
- Cover with a sauce of your choice.
- Finish by sprinkling grated Parmesan cheese over the top.
- Place in the oven just long enough to brown and gratinate the top.
Observations
This recipe uses fresh sweet corn to create a light and tasty dough. The secret is the constant stirring during the cooking process to achieve the ideal texture before you shape the gnocchi and finish them in the oven.
