Where to find ingredients
Find fresh produce and pantry staples at local markets or grocery stores. For the lime, Persian lime (Taiti) is ideal, though any available lime variety works as a substitute.
Preparation method
- Peel the onion and chop it into very small pieces
- Place the water in a kettle and heat over low heat until it boils
- Heat a medium saucepan over low heat
- Add the olive oil and the chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is soft
- Add the bay leaf and the rice to the saucepan
- Stir for approximately 1 minute so the grains are coated in olive oil, which ensures a fluffy result
- Measure 2 cups of the boiling water and pour it over the rice
- Season with the remaining salt and mix
- Increase the heat to medium
- Avoid stirring from this point on
- Wait for the water to evaporate until it reaches the level of the grains
- Reduce the heat and partially cover the pan
- Cook until all the water is absorbed
- Check the bottom of the pan with a fork to confirm the water has fully evaporated
- Turn off the heat
- Add the lime zest
- Cover the pan completely
- Let the rice rest in the steam for 5 minutes
- Use a fork to fluff the grains and incorporate the zest
- Transfer to a bowl and serve immediately
