Where to find ingredients
Find plantains, corn flour, and butter at local grocery stores or produce markets. If plantains are unavailable, firm green bananas may be used as a substitute, though plantains are traditional for this texture.
Preparation method
- Trim the ends of the plantains and peel them.
- Cut each plantain in half lengthwise.
- Cut each half in half again lengthwise.
- If the strips are too thick, cut them into three parts.
- Slice each piece of plantain into approximately 1 cm cubes.
- Heat a large non-stick skillet over medium heat.
- Add the oil to the skillet.
- Place the diced plantains in the skillet and season with a pinch of salt.
- Brown the plantains for about 6 minutes, stirring occasionally, until lightly caramelized. The time may vary depending on the ripeness of the plantain; riper plantains brown faster.
- Reduce the heat.
- Add the butter cubes to the skillet and stir until completely melted.
- Season with 1 teaspoon of salt and black pepper to taste.
- Add the corn flour gradually, stirring continuously with a spatula to incorporate well.
- Cook for another 4 minutes, stirring constantly, until the farofa is crispy and well browned.
- Turn off the heat and serve the farofa immediately.
