Where to find ingredients
Find fresh produce and herbs at local markets or supermarkets. Bulgur wheat can be found in the grains aisle or health food stores; as a substitute for bulgur, cracked wheat is the ideal alternative.
Preparation method
- Place the bulgur wheat in a mixing bowl.
- Cover with water and let it soak for 2 hours.
- Rinse the bulgur wheat under cold running water.
- Drain well.
- Squeeze the bulgur wheat with your hands to remove all excess moisture.
- Rinse the chopped onion under cold water and drain well.
- Combine the bulgur wheat, onion, and all other ingredients except the tomatoes.
- Reserve the tomatoes to be added only at the final moment.
- Cover the container and refrigerate for at least 8 hours.
- Gently fold in the diced tomatoes just before serving.
Observations
This recipe strikes a delicate balance between the texture of the bulgur wheat and the crisp freshness of vegetables and aromatic herbs. Letting the salad rest in the refrigerator is essential, allowing the flavors to meld together perfectly before serving.
