Where to find ingredients
You can find fresh lobster and quality olive oil at local supermarkets or dedicated seafood markets in Gaborone and major coastal areas. Coriander and fresh produce are readily available at local farmers' markets. If fresh lobster is unavailable, frozen lobster tails are a suitable alternative.
Preparation method
- Cook the lobster in a pressure cooker with a little water and a drizzle of olive oil for 10 minutes
- If using lobster tail fillets, cook in a regular pot for 20 minutes with a little olive oil
- Drain all water after cooking
- Allow the lobster to cool completely
- Separate the meat from the shell
- Remove the central vein located along the top of the body
- Season the meat with the crushed garlic and herbs
- Let it rest for at least 30 minutes to develop the flavours
- Heat the olive oil over low heat
- Fry the lobster pieces until they are lightly golden
- Remove the lobster and keep warm
- Sauté the onion, peppers, tomatoes, and coriander in the same oil used for frying
- Serve the lobster hot, accompanied by the sautéed vegetables
Observations
This recipe employs straightforward techniques to enhance the texture and natural essence of the crustacean. Success lies in the marinating time and the careful preparation of the sautéed accompaniments.
