Where to find ingredients
You can find all these ingredients at local grocery stores, supermarkets, or specialty food retailers. Choose fresh potatoes and high-quality dairy products for the best result. Fresh yeast is usually available in the refrigerated section of major markets.
Preparation method
- Mix the condensed milk, heavy cream, cornstarch, vanilla, and 120 ml of milk in a saucepan, heating until it thickens, then set aside to cool
- Beat the egg whites into stiff peaks in a large bowl and add the 240 ml of warm milk with the dissolved yeast
- Add the boiled and mashed potatoes, butter, and salt, mixing well until the dough is smooth
- Gradually add the wheat flour, kneading by hand until the dough is smooth and pulls away completely from your fingers
- Cover the dough and let it rest in a warm place for 20 minutes to rise
- Shape into small balls, place on a baking sheet, and let rise again for another 20 minutes
- Fry the balls in hot oil over medium heat until they are golden brown on all sides
- Wait for the doughnuts to cool, cut them in half, fill with the cold custard, and finish by dusting with sugar on top
Observations
The doughnut, or 'sonho', is an essential classic in Brazilian confectionery. The secret to this recipe is the dough made with mashed boiled potatoes, which ensures an extremely soft and light texture. Prepare the custard filling in advance so it is well-set when you are ready to fill the doughnuts.
For a perfect result, ensure the oil is not too hot while frying to prevent the center from remaining raw. The dusting of sugar on top provides the final touch that everyone loves.
