Where to find ingredients
You can find condensed milk and instant coffee in the baking or coffee aisles of any major supermarket. For the coffee liqueur, check the spirits section. If you prefer to shop at specialty stores, look for international or Latin grocery markets which often carry specific brands of condensed milk favored for these traditional desserts.
Preparation method
- Prepare the caramel by melting the sugar directly in your fluted pudding mold or cake tin over low heat, swirling it to coat the base and sides evenly
- In a blender, combine the eggs, sweetened condensed milk, milk, instant coffee powder, and the liqueur if you are using it
- Pulse or blend all the ingredients until the mixture is perfectly smooth and well combined
- Pour the custard mixture slowly into the prepared, caramel-lined mold
- Cover the top of the mold tightly with a sheet of aluminium foil
- Place the mold in a bain-marie (water bath) inside a preheated oven at 180°C (350°F) for about 1 hour, or until the custard is set
- Take the pudim out of the oven and allow it to cool down completely before placing it in the fridge
- Once thoroughly chilled, run a knife around the edges and invert the mold onto a serving platter to release the pudim
- Serve chilled
