Roasted Vegetables with Paprika

Ingredients

1/2 cauliflower (2 1/2 cups, cut into medium florets)
8 radishes
2 carrots
3 tablespoons olive oil
1 1/2 teaspoons paprika
Salt and freshly ground black pepper to taste

Preparation

  1. Preheat the oven to 220 ºC
  2. Wash the cauliflower florets in a bowl of water
  3. Remove the florets from the water with your hands so that any dirt remains at the bottom of the bowl
  4. Drain well in a colander
  5. Clean the radish skins well with a small brush under running water
  6. Dry the radishes and cut them in half or into quarters if they are large
  7. Peel the carrots and cut them in half crosswise
  8. Cut the thinner part of the carrot into four strips lengthwise
  9. Cut the thicker part of the carrot into six strips lengthwise
  10. Distribute all the vegetables on a large baking sheet
  11. Drizzle the vegetables with olive oil
  12. Sprinkle with paprika, salt, and black pepper
  13. Mix everything very well to ensure each piece is coated with seasoning and oil
  14. Spread the vegetables on the baking sheet keeping space between them so they roast evenly and get nicely browned
  15. Bake for approximately 30 minutes
  16. Turn the vegetables with a spatula halfway through the cooking time to brown all sides
  17. Remove from the oven as soon as they are tender and golden
  18. Serve immediately
