Ingredients
1 kg butternut squash
2 cloves garlic
2 tablespoons olive oil
1 teaspoon salt
2 cloves garlic
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
Butternut squash, garlic, olive oil, and salt are widely available at local supermarkets and farmers' markets. As a substitute for butternut squash, you can use other dense, orange-fleshed winter squashes like kabocha or sugar pumpkin.
Preparation method
- Peel the squash and cut the flesh into cubes of about 2 cm.
- Finely mince the garlic cloves.
- Place a large pot or skillet over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just to perfume the oil, being careful not to burn it.
- Add the squash cubes and the salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the squash starts to soften.
- Place the lid on the pot and reduce the heat to low.
- Let it cook for 5 minutes so the squash finishes softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your preferred texture.
- Turn off the heat and serve immediately.
Observations
With a slightly rustic texture, this puree serves as a practical and healthy alternative to diversify your daily meals.
