1 kg butternut squash
2 cloves garlic
2 tablespoons olive oil
1 teaspoon salt

Preparation

  1. Peel the pumpkin and cut the flesh into cubes of about 2 cm
  2. Finely mince the garlic cloves
  3. Place a large pot or skillet over medium heat with the olive oil
  4. Add the garlic and sauté for 1 minute just to scent the oil
  5. Be careful not to burn it
  6. Add the pumpkin cubes and the salt to the pan
  7. Stir the ingredients occasionally for 10 minutes
  8. Continue until the pumpkin begins to soften
  9. Place the lid on the pan and reduce the heat to the lowest setting
  10. Let it cook for 5 minutes so the pumpkin finishes softening in its own steam
  11. Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon
  12. Mash until it reaches your preferred texture
  13. Turn off the heat and serve immediately
