100g semi-sweet chocolate, grated
1 cup boiling milk
2 cups all-purpose flour
1 tablespoon baking powder
300g unsalted butter

Where to find ingredients
You can find walnuts, semi-sweet chocolate, and all-purpose flour in the baking aisle of any standard supermarket. Sweetened condensed milk is usually located in the baking section or international aisle. Instant coffee granules are available in the coffee/tea aisle. Brandy can be purchased at any local liquor store or the spirits section of larger supermarkets.
Preparation method
- Whisk the egg whites until they form stiff, glossy peaks
- Gently fold in the egg yolks, one by one
- Slowly add the sugar, ground walnuts, grated chocolate, and the boiling milk, mixing until combined
- Carefully fold in the sifted flour and baking powder, taking care not to deflate the batter
- Pour the mixture into a well-greased round cake tin
- Bake in a preheated oven at 180°C (350°F) for about 40 minutes
- Once done, remove from the oven, unmold carefully, and let it cool completely on a wire rack
- For the frosting, beat the butter in a large bowl until it's light, fluffy, and creamy
- Dissolve the instant coffee granules in 1 tablespoon of hot water
- Gradually beat the sweetened condensed milk and the dissolved coffee into the butter until you have a smooth, silky frosting
- Slice the cooled cake horizontally into two layers and drizzle both sides with brandy
- Spread a generous layer of the frosting in the center and cover the top and sides of the cake with the remaining cream
Observations
This recipe yields a beautifully balanced, sophisticated cake that's perfect for coffee lovers. The real secret to that signature silky texture is to cream your butter thoroughly until it's pale and whipped, ensuring a frosting that's as light as it is flavorful.
