Preparation method
- Cut the papayas in half and scoop out all the seeds
- Take the pulp from one of the papayas and blend it until you have a smooth purée
- Dice the pulp of the second papaya into small pieces and set them aside
- In a mixing bowl, whip the heavy cream with the sugar using an electric mixer until you achieve stiff peaks
- Gently fold the papaya purée into the whipped cream, being careful to keep the mixture light and airy
- Add the diced papaya pieces and fold them in softly
- Pour the mixture into an ice tray or a suitable container and pop it in the freezer for at least 4 hours
- To unmold, quickly run the bottom of the container under some warm water
- Slice the sorvete into cubes, serve in bowls, and finish it off by sprinkling the chopped cashew nuts on top
- If you like, squeeze a few drops of fresh lime juice over the top for a little citrus zing
