Homemade Yogurt Flan with Guava Sauce (Flan de iogurte com calda de goiaba)

Ingredients

1 sachet of unflavored powdered gelatine
6 tablespoons cold water
1 can sweetened condensed milk
1 can whole milk (use the condensed milk can as a measure)
2 pots natural yogurt
6 medium red guavas
1/2 cup granulated sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for adjusting the sauce consistency)

Where to find ingredients

You can find all ingredients at local supermarkets in Lusaka or larger urban centers. Look for condensed milk and natural yogurt in the dairy aisle. Fresh red guavas are best sourced from local fresh produce markets when in season. Unflavored gelatine is usually located in the baking supplies section. If fresh guavas are unavailable, high-quality guava pulp or concentrate can be used as a substitute.

Preparation method

  1. Hydrate the powdered gelatine in 6 tablespoons of cold water.
  2. Place the hydrated gelatine in a bain-marie until it is completely dissolved.
  3. In a blender, combine the condensed milk, milk, natural yogurt, and the dissolved gelatine, blending until smooth.
  4. Pour the mixture into a ring mold that has been lightly dampened with water.
  5. Refrigerate for approximately 4 hours, or until the flan is fully set.
  6. While the flan is chilling, prepare the sauce: peel the guavas and cut them into cubes.
  7. Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water.
  8. Simmer over low heat for about 20 minutes, or until the guavas are very tender and beginning to break down.
  9. Remove from the heat and transfer the mixture to a blender. Process until you reach a smooth, homogeneous puree.
  10. Return the guava puree to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens.
  11. If the sauce becomes too thick during cooking, add the optional 1/2 cup of water to reach your desired consistency.
  12. Allow the guava sauce to cool completely before pouring it over the chilled flan to serve.

Observations

This yogurt flan with guava sauce is a classic Brazilian treat, offering a light and refreshing profile that serves as the perfect end to any meal. The contrast between the smooth, delicate flan and the vibrant, fruity guava sauce creates a balance that appeals to every palate.

Preparing this dessert is surprisingly straightforward, requiring only simple pantry staples and a very manageable cooking process. It is the ideal choice for those who want a homemade, professional-tasting dessert without unnecessary complexity.
