Ingredients

12 ears of fresh sweet corn with husks
1 cup of water
2 cups of sugar
1 cup of finely grated coconut
1 pinch of salt

Preparation method

  1. Carefully remove the husks from the corn, keeping them intact for wrapping, and wash them well
  2. Grate the corn kernels off the cobs or cut them close to the cob
  3. Place the kernels and water in a blender and process until smooth
  4. Transfer the mixture to a bowl and stir in the grated coconut, sugar, and salt until well combined
  5. Form small bags using the corn husks, securing the bottom and sides tightly with kitchen twine
  6. Fill each husk bag with the corn mixture, leaving a little space at the top to tie them securely
  7. Bring a large pot of water to a rolling boil
  8. Carefully submerge the pamonhas into the boiling water one by one
  9. Ensure the water is boiling vigorously before adding the pamonhas so they hold their shape
  10. Cook for approximately 40 minutes
  11. Remove the pamonhas carefully using a slotted spoon
  12. Place them in a cool area to set and reach the ideal serving temperature

Observations

Serve warm or at room temperature with a fresh cup of coffee.
