You can find fresh corn on the cob with husks, shredded coconut, and sugar at most local grocery stores, farmers' markets, or produce markets.
Preparation method
- Carefully remove the husks from the corn, keeping them intact for wrapping, and wash them well
- Grate the corn kernels off the cobs or cut them close to the cob
- Place the kernels and water in a blender and process until smooth
- Transfer the mixture to a bowl and stir in the grated coconut, sugar, and salt until well combined
- Form small bags using the corn husks, securing the bottom and sides tightly with kitchen twine
- Fill each husk bag with the corn mixture, leaving a little space at the top to tie them securely
- Bring a large pot of water to a rolling boil
- Carefully submerge the pamonhas into the boiling water one by one
- Ensure the water is boiling vigorously before adding the pamonhas so they hold their shape
- Cook for approximately 40 minutes
- Remove the pamonhas carefully using a slotted spoon
- Place them in a cool area to set and reach the ideal serving temperature
Observations
Serve warm or at room temperature with a fresh cup of coffee.
