Where to find ingredients
In Uganda, you can find spaghetti, carrots, onions, peppers, and broccoli easily at any local market or major supermarket like Carrefour or Capital Shoppers. For the soy sauce, beef/vegetable stock cubes, and mushrooms, head to the imported goods section of larger grocery stores. If you struggle to find ready-made yakisoba sauce, you can easily make a substitute by mixing more soy sauce, a dash of honey or brown sugar, and a touch of ginger and garlic powder to balance the flavour profile.
Preparation method
- Boil the spaghetti in salted water until al dente. Drain and set aside
- Prepare the vegetables: steam the carrots, peppers, onions, and broccoli in a covered pan with 1/2 cup of water and the dissolved vegetable stock cube until they are tender yet still retain a nice crunch
- Season the beef strips simply with a pinch of salt
- In a large pan or wok, heat a splash of vegetable oil and sear the beef strips until browned
- Add the browned beef to the pan with the steamed vegetables
- Make the sauce: in a separate saucepan, combine the ready-made yakisoba sauce, soy sauce, sunflower oil, and 500ml of water
- Dissolve the cornflour in a little cold water and stir it into the sauce pan, then crumble in the beef stock cube
- Simmer the mixture over medium heat, stirring constantly, until the sauce thickens
- Pour the thickened sauce over the pan with the beef and vegetables, mixing well, and let it simmer for a few minutes while stirring occasionally
- Add the sliced mushrooms if you're using them
- Serve the saucy beef and vegetable mixture hot over the cooked spaghetti noodles
