Ingredients

300 gr all-purpose flour
200 gr butter
100 gr sugar
1 egg yolk
2 tablespoons red wine (divided)
6 tart red apples (1kg)
100 gr seedless white raisins

Preparation method

  1. Beat the butter with the sugar until a homogeneous cream is obtained
  2. Add the egg yolk and one tablespoon of red wine to the mixture
  3. Gradually incorporate the flour
  4. Work the dough until it is uniform
  5. Note that the dough will have an oilier and stickier consistency
  6. Separate the dough into two parts, one equivalent to 2/3 and the other to 1/3 of the total
  7. Let both portions rest in the refrigerator for 30 minutes
  8. Peel the apples and cut them into medium slices
  9. Mix the sliced apples with the remaining tablespoon of wine and the raisins
  10. Steam the mixture until the apples are tender
  11. Cover the bottom and sides of a removable-rim pie dish with the larger portion of the dough
  12. Spread the apple filling over the prepared base
  13. Use the smaller portion of the dough to create thin rolls
  14. Place these rolls over the filling to create a lattice pattern
  15. Bake in a medium oven until the top of the pie is golden brown
