Ingredients
1 kg chicken thighs (skinless and boneless)
3 cloves garlic, crushed
1/4 cup vinegar
3 bay leaves
Salt to taste
1 tablespoon vegetable oil
2 medium onions, sliced into rings
2 ripe tomatoes, sliced into rings
1 tablespoon oregano
1/2 tablespoon dried red pepper flakes (optional)
1/2 litre chicken broth
1/2 cup chopped fresh herbs (parsley and scallions)

Preparation method
- In a bowl, season the chicken thighs with the crushed garlic, vinegar, bay leaves, and salt. Let marinate for at least 1 hour
- Heat the oil in a large pan over medium-high heat
- Brown the marinated chicken thighs on all sides
- Add the onion and tomato rings to the pan, gently mixing with the chicken

- Pour the chicken broth into the pan
- Cover the pan and cook over low heat for about 10 minutes after it comes to a boil, until the chicken is tender and the sauce has thickened
- Finish with the chopped fresh herbs and serve hot
