45 g bulgur wheat
1 onion, finely chopped
2 cucumbers, diced
1 bunch parsley, chopped

200 g tomatoes, seeded and diced
3 tablespoons lemon juice
2 tablespoons olive oil
Salt to taste
Black pepper to taste
1/4 teaspoon nutmeg

Preparation
- Place the bulgur wheat in a bowl
- Cover with water and let it hydrate for 2 hours
- Rinse the wheat under running water
- Drain well
- Squeeze the wheat with your hands to remove all excess moisture
- Rinse the chopped onion under cold water and drain well
- Mix the wheat, onion, and all other ingredients except the tomatoes
- Cover the container and refrigerate for at least 8 hours
- Fold in the diced tomatoes just before serving
