1 kg butternut squash

Preparation
- Peel the squash and cut the flesh into 2 cm cubes
- Finely mince the garlic cloves
- Place a large pot or pan over medium heat with the olive oil
- Add the garlic and sauté for 1 minute just to scent the oil
- Be careful not to burn the garlic
- Add the squash cubes and salt to the pot
- Stir the ingredients occasionally for 10 minutes
- Wait until the squash starts to become tender
- Place the lid on the pot and reduce the heat to low
- Cook for 5 minutes to allow the squash to finish softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon
- Mash until you reach your preferred texture
- Turn off the heat and serve immediately
