Rustic Pumpkin Mash (Purê rústico de abóbora)

Ingredients

1 kg butternut squash
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt

Where to find ingredients

You can find butternut squash, garlic, olive oil, and salt at any local grocery store or vegetable market. If butternut squash is unavailable, kabocha squash acts as an excellent substitute, maintaining the desired texture.

Preparation method

  1. Peel the pumpkin and cut the flesh into approximately 2 cm cubes.
  2. Finely mince the garlic cloves.
  3. Place a large pot or skillet over medium heat with the olive oil.
  4. Add the garlic and sauté for 1 minute just to scent the oil, being careful not to let it burn.
  5. Add the pumpkin cubes and the salt to the pan.
  6. Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften.
  7. Place the lid on the pan and reduce the heat to the lowest setting.
  8. Let it cook for 5 minutes so the pumpkin finishes softening in its own steam.
  9. Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred texture.
  10. Turn off the heat and serve immediately.

Observations

With a slightly rustic texture, this mash is a practical and healthy alternative to diversify your daily meals.
