Ingredients
1 kg butternut squash
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
2 garlic cloves
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
All ingredients are available at local fresh produce markets and supermarkets. Butternut squash is the recommended variety; if unavailable, any dense, sweet winter squash can be used as a substitute.
Preparation method
- Peel the squash and cut the flesh into 2 cm cubes
- Mince the garlic cloves finely
- Place a large pot or skillet over medium heat with the olive oil
- Add the garlic and sauté for 1 minute just to scent the oil, being careful not to burn it
- Add the squash cubes and salt to the pot
- Stir the ingredients occasionally for 10 minutes, until the squash starts to soften
- Cover the pot and reduce the heat to low
- Let it cook for 5 minutes so the squash finishes softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your preferred texture
- Turn off the heat and serve immediately
Observations
With a slightly rustic texture, this mash is a practical and healthy alternative to diversify your daily meals.
