Where to find ingredients
Potatoes, onion, and plain flour are readily available at all major supermarkets like Countdown, New World, or Pak'nSave. Beef mince is a staple in the meat section. Beef stock cubes can be found in the pantry aisle with other stocks. Tomato sauce (often labelled as 'passata' or 'canned crushed tomatoes') is in the pasta aisle. Grated cheese, such as a tasty or mozzarella, is found in the dairy fridge. For more authentic Brazilian ingredients, you can check specialized Latin American food importers or online pantry stores, though these items are widely available in standard Kiwi supermarkets.
Preparation method
- Boil the potatoes in water until they are tender
- Peel the potatoes and pass them through a potato ricer while they are still warm
- Gradually add the flour and salt to the potatoes, kneading well until you have a smooth, consistent dough
- Turn the dough onto a floured surface and roll it out into long, thin ropes
- Cut each rope into small, bite-sized pieces of approximately 2cm
- Bring a large pot of salted water to the boil
- Once boiling, drop the gnocchi into the water in batches, waiting until they float to the surface
- Prepare a bowl of cold water and a colander; use a slotted spoon to transfer the cooked gnocchi into the colander, then quickly dip them into the cold water to stop the cooking process
- Repeat this process until all the dough has been cooked
- Drain the gnocchi well and set them aside in a baking dish
- Finely dice the onion and sauté it in a pan with the olive oil
- Add the beef mince and the beef stock cubes to the pan
- Stir well, and once the meat is browned and cooked through, pour in the tomato sauce
- Allow the sauce to simmer for another 4 minutes
- Pour the meat sauce over the reserved gnocchi
- Sprinkle the grated cheese generously over the top
- Pop it under the grill or into the oven until the cheese is golden and melted
- Serve hot
